At 17:00 the dining room is still empty. Those seats go unsold every night, and an empty chair earns a restaurant nothing. So the kitchen would rather cook two courses for you than cook for nobody. That is the whole trick. Same kitchen, same brigade, same produce, an earlier hour.
Drinks, dessert and coffee are on your own tab at the restaurant. Everything else is settled before you sit down, so the kitchen keeps it calm and you keep the good table.
